When was the last time you took credit for something you did NOT do??? Aw, come on! We have all done that at some point in our lives, and not just at our workplace! I know some who do it all the time… I also know some others who are squeamish about taking credit for their own work!!! But why am I talking about taking credit? Because this little gem of a recipe is one that is really low on effort and extremely high on praise! Meaning, you can take oodles of credit for this fab-tasting starter by doing nothing…. well, almost nothing 🙂

Here’s what you need, to serve Smoked Oyster Canapes to 4 people:

2 packs (around 20) salted biscuits, ½ pack of Bumble Bee Smoked Oysters, ½ onion (or 2 stalks of spring onion), ½ tomato, 2 tsp of grated Parmigiano Reggiano, 1 wedge of  a lemon, salt and pepper to taste.

Slice the onion, tomato and oysters very finely. Add salt if needed, a dash of pepper and a squeeze of lemon. Mix lightly. Spread the biscuits out on a plate, spoon the mix onto the biscuits, and sprinkle over with grated Parmigiano.

Yes, that’s it, it really is that simple. Goes very well with any hard liquor, summer cocktail (like my Sublime Cooler) or a good red wine. Serve as a party popper or just as an in-betweener… Takes about 5 minutes to assemble and serve, stays on the plate for much less than that!

Plate-Licker’s Wisdom: Pop a couple into your mouth before serving – these don’t last, and you may be left with lots of glowing compliments… and a very empty plate! (Yes, I learnt it the hard way, thanks to Teddy!)
